Pros

Learned communication skills and work ethic. They had some nice chefs working at the time.

Cons

Understaffed, and classes were a lot of people for the amount of staff we had to manage them. Chefs were frustrated a lot by the timing and scheduling of assistants available. A lot of pressure was put on the assistants to pick up the slack of time mismanagement from other people. I hope that it has improved for the assistants since then, and they are treated better.
