1) 10-question sanitation assessment before the interview is conducted
2) On-the-spot questions about how you would handle certain scenarios such as designing an entree salad option (oil to vinegar ratio of a vinaigrette, protein portion size, etc), current seasonal produce and how you would prepare it, and asking how you would create a kids meal menu option.
